Watercress and Celery Soup

As my Instagram following has grown over the years, I get offered more and more #gifted products from companies keen to promote their products. I've never really succumbed to it. Mostly because I'd rather my grid wasn't one big advert! That's not my purpose. 

This week, alongside offers of miracle supplements, teeth whitening kits and an 'intimate female massager' (I kid you not!) Love Watercress messaged asking if I'd like some British grown Watercress!! Why not :) 

When it comes to sharing foods that are good for us and our skin, I'm always keen to do so. Watercress has soooo many benefits;

  • It's High Antioxidant content may lower your risk of chronic conditions
  • It's beneficial for Heart Health in many impressive ways
  • It contains minerals and Vitamin K which protect against Osteoporosis
  • It's full of beta carotene which is great for our skin
  • It can benefit the immune system to strengthen and support health

So watch out for lots of healthy watercress recipes on the blog this week. Starting with this delicious celery and watercress soup. Ideal if you're not so into juicing through winter and fancy something warmer. 

INGREDIENTS

2 leeks 

1 tbsp olive oil 

2 bunch celery

100g watercress

1 litre water

2 tbsp vegan bouillon 

Sourdough croutons, vegan mayo + horseradish and parsley to decorate

METHOD

Finely chop all the greens

Saute the leeks in olive oil for approx 5 - 7 minutes

Add the celery, watercress and enough water to just about cover the greens

Stir in 2 tbsp bouillon and simmer gently until soft. It shouldn't take too long, less than 20 minutes

Allow to cool a little, then blitz together in a blender until smooth. Once smooth, return to the pan and reheat to serve

Serve decorated with vegan mayo, cream cheese or croutons. I like to stir a spoonful of mayo together with half a teaspoon of horseradish for an extra peppery kick!
