Spiced Apple Chutney

I absolutely love this recipe! Made with apples fresh from the tree and onions fresh from the earth. It's such a simple, delicious combination and spooning it into little glass jars makes beautiful gifts. 

INGREDIENTS

1kg apples (chopped into small cubes)

4 onions (finely chopped) 

350g coconut sugar 

350ml apple cider vinegar

250g raisins 

1 tsp ground ginger

1 tsp ground coriander

1/2 tsp salt

METHOD

  1. Put all the ingredients into a saucepan. Gently bring to the boil
  2. Simmer over a low heat for an hour, stirring occasionally to stop the chutney sticking to the pan
  3. When it's very thick, the chutney is ready. Allow to cool
  4. Spoon into sterilised jars and seal 
  5. Store in a cool, dark cupboard for a couple of months before eating
